Jefferson City's Food Code requires food-service establishments be inspected at least once every six months.
The inspections note critical and non-critical violations.
Critical violations are the more serious, as they are more likely to compromise food safety and cause health problems. Critical violations often concern improper food temperatures, either on a stove/grill or in holding areas after cooking or before cooking, such as in a refrigerator. They also could involve plumbing repairs, personal hygiene, people who are sick handling food or contamination, such as pest infestations.
Non-critical violations are more minor offenses, which could deal with cleaning/maintenance of floors, walls, ceilings, open waste receptacles, unshielded light bulbs in a food preparation area or a missing thermometer in a refrigerator.
The Food Code typically requires establishments to correct critical violations at the time of inspection when possible, or within a longer time frame not to exceed 10 days agreed upon with the regulatory authority. Establishments are required to correct non-critical violations by a date agreed to with the regulatory authority not to exceed 90 days from the time of inspection.

Main St., seven non-critical violations: Lays potato chip and Gatorade display should be elevated off the floor; bottom of upright freezer has debris present; soda fountain has soda debris and splatter present; tracks on North Star chest freezer have debris present; cappuccino machine had splatter and debris present; dust present on vent in open display case; distressed merchandise stored in triple sink.
Chili's Grill & Bar, 3515 Missouri Blvd., seven non-critical violations: hinge on ice cream freezer, breading table cooler was in disrepair; peeling paint on door of microwave (manager stated she will discontinue use of this microwave and order a new one); microwave seal in disrepair and bottom is chipped and broken; floor tile in walk-in freezer and in front of fry station broken; fan covers in walk-in cooler have dust accumulation; side of nacho grill has food debris present; can opener has food debris present (corrected on site).
Convenient Food Mart, 3714 W. Truman Blvd., four non-critical violations: broken and loose tiles in food prep area; dried food debris in bottom of three-door Master Bilt cooler; food debris present in upright freezer; fan covers in walk-in cooler have dust accumulation.

Dragon Kitchen, 2219 Missouri Blvd., Suite D, one critical violation: potential hazardous food product on cold buffet table not at correct cold holding temperature. Follow-up inspection - no violations.
El Espolon Mexican Restaurant, 915 Eastland Drive, two critical violations: contents of vegetable table above 45 degrees (beef, sour cream, guacamole, etc. - beef was discarded on site by owner, other items iced); bar glass washer not chemically sanitizing, broken line discovered - and five non-critical violations: several ceramic wall tiles missing in kitchen; spillage present in front of community dumpster; several hand sinks in kitchen pulling loose from wall supports; vegetable prep table door gasket torn and non-functional; servers' expo table had erratic temperatures from 43 degrees on salsa to 47 degrees on milk. Hunan Restaurant, 1416 Missouri Blvd., four non-critical violations: no cover nor lid present on trash can in ladies' restroom; screen door sometimes left open to back exit of restaurant; several table sauce trays have no lids; floors under fryers soiled with grease.
Jefferson City Sub Shop, 1902 Missouri Blvd., six non-critical violations: areas of broken drywall in slicer area, around some air vents and storage shelves; ice cubs show soil specks present, need to clean ice maker throat and shatter plate; self-serve plastic ware not presented handle first or wrapped; unprotected light bulbs above ice bin of soda dispenser; no paper towels in ladies' restroom; areas of dust clinging in hood, walk-in cooler, walls, kitchen ceiling and light fixtures.
