Jefferson City food service inspections for February 2017

Jefferson City's Food Code requires food-service establishments be inspected at least once every six months.

Priority violations are items that, if in non-compliance, are more likely to contribute to food contamination, illness or an environmental health hazard. Some examples of priority items include improper holding temperatures of foods, inadequate cooking of food items, poor personal hygiene and contaminated equipment.

Examples of core items include cleaning and maintenance of floors, walls and ceilings; open waste receptacles; unshielded light bulbs in food preparation areas; and missing thermometers in refrigeration units for monitoring temperature.

The Food Code typically requires establishments to correct priority violations at the time of inspection when possible, or within a longer time frame not to exceed 10 days agreed upon with the regulatory authority. Establishments are required to correct core violations by a date agreed to with the regulatory authority not to exceed 90 days from the time of inspection.

The February 2017 inspections noted:

Tolson Drug Food Snack Bar, 226 E. High St., one priority violation: soups in soup keeper below required 135-degree F hot holding temperature (corrected on site) - and three core violations: store doing wash/sanitize/rinse instead of wash/rinse/sanitize; some bare wood exposed due to recent remodeling; cheese sauce below 135 degrees F in dispenser.

Wendy's Old-Fashioned Hamburgers, 3536 Country Club Drive, no violations.

Arby's, 2815 S. Ten Mile Drive, one priority violation: no soap at fry hand sink - and two core violations: no paper towels at fry hand sink; trash and debris present at drink station.

Break Time No. 3043, 810 Stadium Blvd., two core violations: no test strips available for sanitizer; no soap at hand sink for employees.

Break Time No. 3049, 1200 Missouri Blvd., no violations.

Break Time No. 3118, 326 Ellis Blvd., three priority violations: foods in hot cabinet below required minimum hot holding temperature; subs and wedges and other perishable foods above 41 degrees F in Dashboard Diner case; corn dogs and egg rolls below required 135 degrees F in hot cabinet - and two core violations: facility missing a cook's thermometer (infrared thermometer in use); both hot cabinet and Dashboard Diner cases out of required temperature zones.

Follow-up inspection: no violations.

Jimmy John's, 128 E. High St., one core violation: seals on make cooler doors torn.

Madison's Cafe, 216 Madison St., one priority violation: dish machine sanitizer does not test sufficient (corrected on site) - and three core violations: menu has reminder but not disclosure; burned-out light over catering ice machine; detail cleaning of walk-in cooler fan cover and wire shelving necessary.

Follow-up inspection - one core violation: menu has reminder but not disclosure.

McDonald's, 1425 Missouri Blvd., four core violations: ice cream machine has dried debris present; microwave has food debris present; both soda machines in lobby area have debris present; floors in grill area have debris present.

Mel's Country Cafe, 2421 Industrial Drive, one priority violation: barbecue pork steaks below required 135 degrees F in steam table and stovetop (corrected on site) - and four core violations: area around kitchen hand sink and side of Coke cooler soiled; missing hand sink being replaced in pantry area and new hand sink awaiting installation; worn groove in can opener blade; menu lacks disclosure and reminder now required for consumer advisory.

O'Donoghue's Steaks & Seafood, 900 E. High St., five core violations: food debris present around utility line center island prep area; debris present behind bar glass cooler; base coving loose under commercial dishwasher; plastic rack in bar cooler not clean; wire rack in prep cooler rusted.

Perkins Restaurant & Bakery, 1722 Jefferson St., three priority violations: cut melon in left expo tabletop above 41 degrees F (corrected on site); dish machine not sanitizing; triple sink dispenser not sanitizing - and three core violations: employee restroom soiled and in disrepair; walk-in freezer has icing problem, causing ice buildup on floor and ceiling; several loose quarry tiles present on cook's line with standing water.

Phillips 66 MPC No. 47, one priority violation: ordered sanitizer did not arrive with food order (corrected on site).

Ruby Tuesday, 2300 Missouri Blvd., three core violations: storage shelving in walk-in cooler has debris buildup; floor needs cleaned in server station corner and corner in walk-in cooler; vents in server station have dust accumulation (corrected on site).

Southwest Eagle Stop, 1913 Southwest Blvd., no violations.

Spectators Sports Bar and Grill, 232 E. High St., three core violations: open lids on trash dumpster; menu has reminder but no disclosure; kitchen floor has some bare wood spots due to worn epoxy finish.

Weber Meat Market, 1708 Missouri Blvd., three core violations: some lights need bulb shields; tile floor around triple sink cracked or coming up; walk-in cooler floor could be picked up and cleaned.

Capital Bowl, 2017 Christy Drive, four core violations: interior microwave corners soiled and shelving under fryer and fryer legs and sides soiled with grease; ice maker shatter plate starting to soil and dust present on interior cabinet shelving at front counter; paper towels present at hand sinks but not in dispensers; floor tile coming up underneath dish machine and in some kitchen spots.

Yo Yums, 122 E. High St., four core violations: wall board under four compartment sink in disrepair; wall debris and cobwebs present in corner by four-compartment sink; self-closing device on bathroom door not working correctly; light cover over four-compartment sink missing.

Schulte's Fresh Foods - Deli, 1904 Southwest Blvd., two core violations: deli kitchen floor deteriorating and small holes present; kitchen hand sink pulling away from wall.

Schnucks - Produce, 1801 Missouri Blvd., no violations.

Schnucks - Seafood, 1801 Missouri Blvd., two core violations: dirt/debris buildup in corner behind bulk ice maker; coats and aprons stored on dry food storage rack.

Schnucks - Bakery, 1801 Missouri Blvd., one core violation: debris buildup in corner under power wash sink and in corner guard by bakery display.

Schulte's Fresh Foods - Meat/Seafood, 1904 Southwest Blvd., two core violations: vice grip pliers holding slicer guard; ceiling grid soiled in smokehouse area.

Jack Flash, 910 Fairgrounds Road, three core violations: open boxes of sleeved cups stored on floor in back stock room; equipment in poor repair including bottom of Landshire cooler and door gasket, cabinets of drink counter, triple sink counter and cabinet; Landshire cooler foods at 41-42 degrees F (should be set to 41 degrees F or lower).
