Jefferson City food service inspections for December 2015

Jefferson City's Food Code requires food-service establishments be inspected at least once every six months.

The inspections note critical and non-critical violations. Critical violations are the more serious, as they are more likely to compromise food safety and cause health problems. Critical violations often concern improper food temperatures, either on a stove/grill or in holding areas after cooking or before cooking, such as in a refrigerator. They also could involve plumbing repairs, personal hygiene, people who are sick handling food or contamination, such as pest infestations.

Non-critical violations are more minor offenses, which could deal with cleaning/ maintenance of floors, walls, ceilings, open waste receptacles, unshielded light bulbs in a food preparation area or a missing thermometer in a refrigerator.

The Food Code typically requires establishments to correct critical violations at the time of inspection when possible, or within a longer time frame not to exceed 10 days agreed upon with the regulatory authority. Establishments are required to correct non-critical violations by a date agreed to with the regulatory authority not to exceed 90 days from the time of inspection.

The December 2015 inspections noted:

Bee Line Snack Shops, 2205 Southridge Drive, three non-critical violations: soda machine has splatter and debris present; cappuccino machine has debris present; seal on True cooler torn.

Burger King No. 2271, 2207 Missouri Blvd., no violations.

Captain D's Seafood, 2118 Missouri Blvd., seven non-critical violations: microwave has peeling paint and plastic on door; racks in Traulsen cooler peeling; many small cooling units have torn seals (manager stated new seals on order); seal on walk-in cooler torn; fan covers in walk-in cooler had debris present; Traulsen cooler had food debris on bottom; food on floor in and around fryer.

Chipotle Mexican Grill, 1400 Missouri Blvd., no violations.

Convenient Food Mart, 426 Brooks St., eight non-critical violations: hand sink has utensils stored in basin; food debris accumulation on bottom interior of Pepsi cooler; food debris accumulation interior prep cooler; food product stored on floor in walk-in cooler; dust accumulation on ceiling tiles above self-serve station and on shelves above self-service counters; interior of trash cabinets at coffee station have food debris accumulation; grease accumulation on walls above fryer area; faucet in public bathroom leaking/metered faucet not providing continuous flow of water for at least 15 seconds.

• Follow-up inspection: three non-critical violations: faucet in public bathroom leaking/metered faucet not providing continuous flow of water for at least 15 seconds (plumber has been contacted but has not fixed faucet at this time); interior of trash cabinets have trash accumulation; grease accumulation on walls above fryer area.

Convenient Food Mart, 3714 W. Truman Blvd., one critical violation: improper method of cleaning ware items (items should be washed, rinsed and sanitized) - and three non-critical violations: hand sink being used to hold dirty dishes and cleaning buckets; debris present on cream machine; tracks on MiraCool Pepsi cooler have debris present.

• Follow-up inspection: no violations.

Daisy Delight, 2715 E. McCarty St., no violations.

Dragon Kitchen, 2219 Missouri Blvd., Suite D, one critical violation: cold products on buffet table not at 41 degrees or below - and four non-critical violations: drain line to hand sink in prep room not connected correctly, causing water to leak on floor; outside dumpster lids open; box of cabbage stored on floor in walk-in cooler; ice scoop in bulk ice machine server station has crack in scoop portion.

Dunn Bros Coffee, 3218 W. Edgewood Drive, Suite 1300, two non-critical violations: small leak in drain line of three-compartment sink; dust accumulation on walls in men's bathroom.

Capitol Plaza Hotel/Fountain Court Lounge, 415 W. McCarty St., one critical violation: kitchen dish machine booster heater broken (test strip did not turn black as required; part has been ordered) - and one non-critical violation: ice maker shatter plate and roof, roll-out rack in walk-in cooler, and floor of walk-in cooler soiled.

• Follow-up inspection: no violations.

Freddy's Frozen Custard, 2103 Missouri Blvd. Suite A, two critical violations: no sanitizer tested in dishwasher (manager called repair company on site); goose neck sprayer on triple sink below flood rim.

Hardee's No. 1500561, 3601 Country Club Drive, six non-critical violations: floors under fryers have food debris present; wall in mop sink area has hole in baseboard; wall in walk-in cooler not secured; door on walk-in cooler has hole near bottom; inside and seals on Traulsen freezer have food accumulation; dirty shelves in walk-in cooler.

Hibachi Grill & Supreme Buffet, 730 W. Stadium Blvd., one critical violation: potentially hazardous food product not held at 41 degrees or below on cold bar and sushi bar - and eight non-critical violations: food establishment did not have adequate records for using time as control for food products; cans on storage shelf in work room not labeled; coats and caps being stored in food storage/preparation areas; dust present in ceiling vents in sushi prep area; food residue and grease present on floor and utility pipes behind fryer station; food debris present on slicer, knives, meat grinder parts, meat cleavers, cutting boards when in storage; disposable paper towels not present in employee bathroom dispenser; cold water faucet not working on kitchen hand sink.

• Follow-up inspection: no violations.

High Street Pub, 209 E. High St., three non-critical violations: air vent soiled and ceiling tile hanging from grid; floor area under soda tanks and floor drain from four-hole sink soiled; microwave roof and area under turntable soiled.

Hoxton Tavern and Grill, 418 W. Elm St., five non-critical violations: floor under and behind fryers has pooled grease/oil present; grease catch pan ill-fitting, causing spilled grease onto floor under hood; can opener badly soiled; spilled cardboard/trash present around dumpster; holes present in wall tile near dining room entrance.

Imo's Pizza, 706 Missouri Blvd., Suite D, one critical violation: no date labels on food items open in walk-in cooler or salad make table.

• Follow-up inspection: no violations.

Jimmy Johns Gourmet Sandwiches, 3750 W. Truman Blvd., one non-critical violation: no paper towels in women's restroom.

Kate and Ally's Pizzeria, 1418 Missouri Blvd., Suite A, two non-critical violations: dish racks/interior dish machine not clean; food debris present on wall by mixer and on wall/shelving unit by hot holding unit.

McDonald's, 815 Eastland Drive, three non-critical violations: gum chewing while working on line by multiple employees; rusted outside near drain plug of garbage dumpster, allowing fluid to leak out and run under enclosure gate; doors of Delfield four-door prep cooler pop open, allowing temperature rise in cooler.

Mi Pueblo Bakery & Taqueria, 510 Ellis Blvd., Suite F, one critical violation: raw meat slicer located on flat top of ice maker, blood trail leads to closed door of ice maker - and four non-critical violations: roll-out shelving walk-in cooler, three-door reach-in cooler door sills, slicer and work tables soiled; sacks of dry peppers/spices located on basement floor under sewer lines; condensate lines in True three-door reach-in cooler unhooked, condensate drips into overflowing jugs underneath; walk-in cooler floor and basement floor especially soiled.

• Follow-up inspection: one non-critical violation - condensate jugs have been emptied, but condensate lines need to end in evaporation pans or drain line to mop sink, not the floor or jugs that can overflow.

Michigan Place Expo Center, 714 Michigan St., five non-critical violations: no hot water available at back kitchen hand sink; back hand sink drain line leaks into cabinet; ice maker shatter plate soiled; floor tiles coming up or broken near mop sink and dishwasher; some food and beer outdated in dry storage (owner agreed to remove from premises).

Pizza Hut, 1431 Christy Drive, one critical violation: fryer has accumulation of grease around vent - and one non-critical violation: fan covers in walk-in cooler had dust accumulation.

Prison Brews, 305 Ash St., one non-critical violation: gasket on one-door Coke cooler in disrepair.

Sonic Drive-In, 201 Commerce Drive, no violations.

Stir Fry 88, 3600 Country Club Drive, Suite 226, three non-critical violations: can rack and roll-away bins soiled; no test strips available for triple sink; wash-sanitize-rinse being performed instead of wash-rinse-sanitize.

Taco Bell No. 377, 1905 Southwest Blvd., three non-critical violations: door missing from front counter and one bottom shelf cracked and sagging; dish sink walls appear soiled, especially at bottom above coved base; bad leak from back hand sink drain line onto floor.

Welcome Inn Again LLC, 130 E. Dunklin St., one critical violation: employee bare hand contact with fried chicken out of steam table to plate - and three non-critical violations: employee coat storage in kitchen above toaster and work table surface (coats removed on site); sausage patties in steam table at 115 degrees F, not 135 degrees F as required; floor behind bar at drink station deteriorated.

Quality Inn & Suites, 1716 Jefferson St., one non-critical violation: cabinet under sink has water damage and protective coating not holding.

Schnucks - Meat, 1801 Missouri Blvd., one non-critical violation: chipping paint on post in meat work room.

Schnucks - Seafood, 1801 Missouri Blvd., three non-critical violations: water dripping from wash/sanitizer tube in dish-wash area, making floor wet (corrected on site); disposable paper towel not present in dispenser in food prep/dish-washing area; trash container not present at front hand sink for disposable paper towels after use (corrected on site).

Sonic Drive-In, 314 Ellis Blvd., one non-critical violation: vents on both grill side and fry side had large amounts of grease accumulation present.

McDonald's, 724 Stadium Blvd., no violations.

Hy-Vee Food Store - Produce, 3721 W. Truman Blvd., three critical violations: open bags of cheese in walk-in cooler did not have date label; salad dressings in salad bar area not being kept at 41 degrees or less; hand sink in produce prep area leaking - and four non-critical violations: items on salad bar not protected by sneeze guard; missing ceiling tile in produce prep area; walls in produce area have food debris and splatter present; fan covers in walk-in cooler had dust accumulation.
