October 2018 restaurant inspections

Jefferson City’s food code requires food-service establishments to be inspected at least once every six months.

Priority violations are items, if in non-compliance, that are more likely to contribute to food contamination, illness or an environmental health hazard. Some examples of priority items include improper holding temperatures of foods, inadequate cooking of food items, poor personal hygiene and contaminated equipment.

Examples of core items include cleaning and maintenance of floors, walls and ceilings; open waste receptacles; unshielded light bulbs in food-preparation areas; and missing thermometers in refrigeration units for monitoring temperature.

The food code typically requires establishments to correct priority violations at the time of inspection when possible, or within a longer time frame not to exceed 10 days agreed upon with the regulatory authority. Establishments are required to correct core violations by a date agreed to with the regulatory authority not to exceed 90 days from the time of inspection.

Inspections for October 2018 noted:

American Legion, 1423 Tanner Bridge Road, two core violations: Debris present on wall in dish room above work table; debris present on ceiling of walk-in cooler-kitchen, dust present on ceiling around TV area.

Belair Elementary School, 701 Belair Drive, no violations cited.

Cedar Hills Elementary School, 1510 Vieth Drive, no violations cited.

East Elementary School, 1229 E. McCarty St., one priority violation: Lettuce greens were not date labeled in the walk-in cooler, corrected on-site. One core violation: The goose neck on the triple sink was below the flood rim, corrected on-site.

Lewis and Clark Middle School, 325 Lewis and Clark Drive, no violations cited.

Simonsen Junior High School, 501 E. Miller St., one core violation: Sanitizing bucket not at the correct concentration, corrected on-site.

Southwest Elementary School, 812 St. Mary’s Blvd., no violations cited.

Thorpe Gordon Elementary School, 1101 Jackson St., one priority violation: Bleach solution was too strong, corrected on-site.

West Elementary School, 100 Dix Road, one core violation: Two dented cans on the can rack, corrected on-site.

Immaculate Conception Elementary School, 1208 E. McCarty St., no violations cited.

Arris Pizza Palace, 117 E. High St., two core violations: Light covers missing over lights in food-preparation area; pizza maker cooler interior lid is loose.

Convenient Food Mart, 426 Brooks St., two core violations: Floors dirty along front window area; shelving in walk-in cooler has rust accumulation.

Convenient Food Mart, 701 Eastland Drive, five core violations: Doughnut case has debris present; creamer machine has debris present; tracks of the Hussmann Freezer has debris present; the gaskets on the Master Bilt Cooler are torn; the shelf in the Master Bilt Cooler has debris present.

Dragon Kitchen, 2219 Missouri Blvd., five core violations: Leak present in the hand sink drain line in food-preparation room; no soap present at kitchen hand sink for hand washing; wire rack in walk-in cooler is rusty-not easily cleanable; chest freezer in storeroom interior lid in disrepair; fly traps present over food-preparation surfaces.

El Espolon Mexican Restaurant, 915 Eastland Drive, three priority violations: Open employee drink container in kitchen work area, drink discarded by owner, corrected on-site; bar glass washer is not sanitizing, owner called for serviceman; knives present on magnet bar at meat cutting table were soiled with scraps and debris, knives removed and taken to triple sink for washing and sanitizing.

Six core violations: Walk-in cooler fans icing over, food temps 41-43 degrees; hot water turned off at one kitchen hand sink due to leak; hot water turned off at one bar four-hole sink due to leak; tile coming off walls in kitchen at triple sink above dish machine; open ceiling tile present in kitchen due to leak repairs; some sauces and salsas prepared previous evening.

El Espolon Mexican Restaurant, 450 Rock Hill Road, three core violations: Overnight storage of panned lemons in ice bin of soda dispensers, corrected on-site, manager made policy of cut lemon storage to be held in servers cooler instead of ice bin; due to water leak, hot water turned off at one of four bar sinks until repaired; unprotected light bulb present in hood over food prep/cook area.

Gerbes West Deli Department, 2805 W. Truman Blvd., five core violations: Vent hoods over the fryers had accumulation of grease; Grab ‘N Go hot case has debris present; wrapping station has debris present; microwave has debris present; return air vent has dust accumulation in the dishwashing area.

JC Mart, 105 W. Dunklin St., one priority violation: True Cooler was not at the proper temperature, corrected on-site. Three core violations: Light switch in the restroom is not secured to the wall; toilet paper holder in the restroom is missing; paper towels were not in the holder present in the restroom.

Little Caesars Pizza, 2407 Missouri Blvd., one priority violation: Cleaner stored above food products on shelf, corrected at time of inspection.

Eight core violations: Front lobby light covers/back door light cover has dead insect accumulation; wall above three-compartment sink not clean; floor and wall above mixer area not clean; light cover absent over light in kitchen; pizza boxes stored on floor walk-in cooler; self-closing device not present on employee bathroom; fan cover/ceiling in walk-in cooler has dust accumulation; soda plastic holder in cooler not clean.

Love Sushi, 2201 Missouri Blvd., three core violations: Microwave had debris present; peeling paint on the ceiling in the kitchen area; hand sink in the sushi area was blocked.

McAlister’s Deli, 2323 Missouri Blvd., three core violations: Floors in the dish area and in front of the make tables have chipped and missing flooring; bread bowls not stored in the proper area, corrected on-site; in-use utensils had debris present, corrected on-site.

Papa John’s Pizza, 2103 Missouri Blvd., two priority violations: Bare hand contact with ready-to-eat food; tobacco use in the walk-in cooler.

Four core violations: Can opener had debris present; two dented cans on the can rack; no hand wash sign at the hand sink; torn gasket on the make cooler.
