Jefferson City food service inspections for March 2016

Jefferson City’s Food Code requires food-service establishments be inspected at least once every six months.

The inspections note critical and non-critical violations. Critical violations are the more serious, as they are more likely to compromise food safety and cause health problems. Critical violations often concern improper food temperatures, either on a stove/grill or in holding areas after cooking or before cooking, such as in a refrigerator. They also could involve plumbing repairs, personal hygiene, people who are sick handling food or contamination, such as pest infestations.

Non-critical violations are more minor offenses, which could deal with cleaning/ maintenance of floors, walls, ceilings, open waste receptacles, unshielded light bulbs in a food preparation area or a missing thermometer in a refrigerator.

The Food Code typically requires establishments to correct critical violations at the time of inspection when possible, or within a longer time frame not to exceed 10 days agreed upon with the regulatory authority. Establishments are required to correct non-critical violations by a date agreed to with the regulatory authority not to exceed 90 days from the time of inspection.

The March inspections noted:

Lawson Elementary School, 1005 Fairgrounds Road, one critical violation: No sanitizer present in the mechanical dishwasher (call placed for repair).

Moreau Heights Elementary School, 1410 Hough Park St.: no violations.

Simonsen Junior High School, 501 E. Miller St., one non-critical violation: vent food had accumulation of debris present.

South Elementary School, 707 Linden Drive, no violations.

Thomas Jefferson Middle School, 1201 Fairgrounds Road, no violations cited.

Saint Joseph Elementary School, 2303 W. Main St., one non critical violation: diced chicken on salad bar above required 41 F, ice present under product. (Corrected on site: ice placed under displayed food; manager will monitor for proper temperature.)

Saint Peter Elementary School, 314 W. High St., no violations.

Trinity Lutheran Elementary School, 803 Swifts Highway, no violations.

Break Time 3043, 810 Stadium Blvd., two non-critical violations: no soap provided for employees use at hand-wash sink station; no paper towels provided for employees at hand-wash sink station.

Break Time 3044, 3000 W. Truman Blvd., no violations.

Break Time 3050, 1907 E. McCarty St., five non-critical violations: ladies’ restroom door is not self-closing; service counter doors and hinges loose; interior of lower cabinet cracked and water-damaged; unshielded light bulbs present in walk-in cooler with opened boxes of franks, etc.; damaged walks behind ice maker and near restrooms; drain line piping from drink station runs across floor in back storeroom.

Town Grill, 315 Jefferson St., no violations.

Casey’s General Store, 109 Eastland Drive, one non-critical violation: bottom of make cooler, seals on make cooler, make table lid and soda machine diffusers had debris present.

China Wok, 520 Ellis Blvd., no violations.

Convenient Food Mart, 701 Eastland Drive, three non-critical violations: seal on Master Bilt cooler torn.; shelf in the True cooler has debris present; Pepsi soda machine has splatter and debris; popcorn on the floor around popcorn machine.

Dollar General Store 1433, 2114 Schotthill Woods Drive, no violations.

Domino’s Pizza, 3732 W. Truman Blvd., one non-critical violation: no covered trash can in employee restroom.

El Jimador, 2830 W. Edgewood Drive, three non-critical violations: some kitchen tiles stained or soiled with food, splatters, dust, etc.; walk-in cooler at minimum safe food temperature but excessive ice/frost covering fan covers and condenser, service unit; door gaskets torn or missing on several pieces of equipment including Coke three-door cooler and meat table cooler.

El Jimador Inc., 1410 Missouri Blvd., three non-critical violations: bottom of veggie prep table cooler has cracked plastic bottom, traps moisture; several walk-in cooler racks/shelves badly rusted; missing drain plug on trash dumpster, leaks onto parking lot; employees’ restroom door not self-closing as required.

Firehouse Subs, 2103 Missouri Blvd., Suite D, one critical violation: chili below required 135 F in steam table, meatballs below required 135 F in steam table. (Corrected: Manager reheated meatballs and chili while on site.)

Hy-Vee Food and Grocery Store, 3721 W. Truman Blvd., two non-critical violations: M&M display on grocery floor; flour on display shelf; bottom of reach-in freezers (under microwave meals in front of whole turkeys under vegetables) have debris present.

JC Mart, 105 W. Dunklin St., two non-critical violations: seal on walk-in cooler door torn; fan covers in walk-in cooler had dust accumulation; Blue Bunny chest freezer has debris inside and on edge of cooler; coffee machine had debris present.

JC Pizza Company, 1506 E. McCarty St., one critical violation: dish machine sanitizer tests insufficient, well below 50 rpm — and two non-critical violations: loose floor tile present in front of ice maker; previous floor tile repair violation remains.

Dairy Queen Grill and Chill, 2114 Missouri Blvd., four non-critical violations: front cold kitchen hand sink missing, awaiting contractor; ceramic coved base tile missing from wall in several locations such as across from mop sink and near blast freezer; cold kitchen large dessert dress table cooler running above 45 F (no potentially hazardous foods were present nor can be added until cooler is adjusted to 41 F or lower); unused equipment storage and leaf litter present at dumpster enclosure.

Little Caesers Pizza, 2407 Missouri Blvd., Suite F, one critical violation: large chest freezer lid insulation exposed, lid in disrepair — and six non-critical violations: drain cover missing over drain in dish room; single-service item boxes and pizza boxes stored on floor; disposable paper towels needed in employee bathroom; dish rack for clean dish storage not clean; door tracks and soda racks in Pepsi cooler not clean; several floor tiles in facility in disrepair; numerous light covers missing or broken in food preparation areas of kitchen.

Mi Tolteca Mexican Restaurant, 1850 Route C, Suite E, two critical violations: Carnitas prepared day before above 50 degrees F in walk-in cooler found in large deep pan with lid covering; dish machine not pumping sanitizer from storage bucket — and eight non-critical violations: ladies’ restroom has no covered trash receptacle present, all lids missing; non-functional convection oven and two-door Victory reach-in freezer stored inside kitchen; pallets and old countertops piled behind dumpster area sliding down hill; short wall between triple sink and cooling equipment hood badly deteriorated; walls around ice maker covered in dust; kitchen air vent by dish machine soiled with dripping fluid/grease; exterior hood exhaust fan has dripping oil/grease on side of building; hand sink in bathroom blocked from usage by storage of spare equipment parts in sink; door gasket on meat prep table missing in long lengths.

West Gate Lanes/Capital Bowl, 2017 Christy Drive, three critical violations: numerous rodent droppings in front counter service cabinet; raw meat above ready-to-eat food found during storage in Kenmore units by side cooler (raw chicken, above bread, cheese and lettuce); ready-to-eat potentially hazardous food found without date labeling present in Coke two-slide door cooler (chopped ham, sliced tomatoes, cooked taco meat, etc.) — and two non-critical violations: floor tile in dish room storeroom and main bar missing, chipped or in poor repair; hood filters, fryers, beer walk-in cooler, fan cover and condenser soiled or need cleaning.

• Follow-up inspection: floor tile present in dish room, store room and main bar chipped, missing or in poor repair; hood filters, fryers and floor under fryers still need cleaning of grease deposits and spilled food; ice maker shatter plate soiled with possible slime mold present; beer walk-in cooler fan cover and condenser were cleaned of dust; some old rodent pellets still present in corners of front cabinet along with heavy dust.

Clarke Senior Center, 1310 Linden Drive, one non-critical violation: damaged or missing paint on floor under dish machine; floor drain covers plugged and debris will not let water through.

Subway Sandwich Shop, 1850 Route C, Suite D, one non-critical violation: no hand-wash sign at front hand-wash sink.

Red Tail Lounge LLC, 633 E. High St., no violations.

Jack in the Box 6229, 2333 Missouri Blvd., four non-critical violations: Single-serve cups stored on floor; floors in walk-in freezer had food debris present; vent hoods over grill and fryers have debris present; bottom of Randell freezer had debris present; soda machine in lobby had debris present; soda machine in drive-thru had debris present; seal on True refrigerator torn; Randell freezer has bottom seal in bottom.
