Jefferson City's Food Code requires food-service establishments be inspected at least once every six months.
The inspections note critical and non-critical violations.
Critical violations are the more serious, as they are more likely to compromise food safety and cause health problems. Critical violations often concern improper food temperatures, either on a stove/grill or in holding areas after cooking or before cooking, such as in a refrigerator. They also could involve plumbing repairs, personal hygiene, people who are sick handling food or contamination, such as pest infestations.
Non-critical violations are more minor offenses, which could deal with cleaning/maintenance of floors, walls, ceilings, open waste receptacles, unshielded light bulbs in a food preparation area or a missing thermometer in a refrigerator.
The Food Code typically requires establishments to correct critical violations at the time of inspection when possible, or within a longer time frame not to exceed 10 days agreed upon with the regulatory authority. Establishments are required to correct non-critical violations by a date agreed to with the regulatory authority not to exceed 90 days from the time of inspection.
The July 2015 inspections noted:

Bingham's Restaurant (Truman Hotel), 1510 Jefferson St., one non-critical violation: empty walk-in cooler No. 2 running above 41 degrees F and above 45 degrees F.
Bones Restaurant & Lounge, 210 E. Commercial Way, one critical violation: raw meat stored with or above ready-to-eat food in walk-in cooler and pantry Coke reach-in cooler - and four non-critical violations: rust and water starting to come from heater elements on one water heater; uncovered breading mix found next to True two-door freezer under dusty ceiling grate; soil present on walk-in cooler wire shelves, ingredient bin exteriors by salad prep station, and salad lowboy cooler interior under pullout pans; ice buildup present in second-floor GE condiment cooler.
• Follow-up inspection - one non-critical violation: rust and water starting to come from heater elements of one water heater (replacement scheduled).

J. Pfenny's Sports Bar & Grill, 217 E. High St., five non-critical violations: drywall next to walk-in freezer entrance chipped; condensation leaking from kitchen ceiling tile into work area; ice maker shatter plate and interior bin sides show mold or soil deposits; unprotected bulbs present above ice maker and pizza dough mixer; some light fixtures non-functional in kitchen (being replaced soon).

McDonald's, 815 Eastland Drive, six non-critical violations: salad prep station utility sink has cold water turned off due to leak; Traulsen salad cooler marginal temperature inside due to leaky, open doors; lowboy milk cooler at marginal temperature; line salad cooler at marginal temperature, possible freon leak; adjustments or repairs needed to milk cooler, line salad cooler and Traulsen cooler; broken or loose quarry tile floor in front of Beverage/McCafe stations.
