BizBeat: New bistro coming to Missouri State Capitol

A new bistro will replace Chez Monet in the Missouri State Capitol at the start of the new year.

1905 Bistro will open Jan. 4 in the west basement of the Capitol, under the House of Representatives chamber and near the House hearing rooms.

That space currently houses Chez Monet, which opened in that location in 2018. The bakery will move out of the Capitol in mid-December.

1905 Bistro will specialize in healthy brunch food, like power bowls, grains and eggs, steak and eggs, and eggs Benedicts, owner Anthony Rudkin said.

All menu items will cost under $10.

1905 Bistro will be open 7 a.m.-2 p.m. Monday through Friday.

The bistro will also emphasize breakfast catering, providing free delivery to the Capitol, Truman Building and downtown Jefferson City area, Rudkin said. He and business partner Will Johns are also exploring free or cheap delivery to anywhere else in Jefferson City.

"Breakfast catering is something we're going to try to hit hard on," Rudkin said. "I think it's kind of a hard thing to do, but if you get a group of 10 people who wants good breakfast for under $10 a person, that would be something these bigger companies here would take advantage of."

Along with purchasing products from local industries, Rudkin said, he hopes to use 1905 Bistro to give back to the community, such as donating excess food instead of throwing it away.
