There's a new business opening its doors in the small community of Hartsburg.

Taking the place of the former Dotty's Cafe on Main Street, the new spot is paying homage to its new home with its name of The Burg, which is how locals often refer to Hartsburg. Jay and Kathy Leffert purchased the property in June and quickly began giving the place a new look ahead of its grand opening Wednesday.

Kathy Leffert said they bought the property as they wanted to keep a restaurant in the area, something that would not only continue to serve as a favorite for Hartsburg residents, but be able to serve the cyclists coming through on the Katy Trail and customers coming from Ashland and Jefferson City. A portion of the front has been revamped as a convenience store area primarily meant to serve cyclists looking for a quick cold drink or snack before heading back out on the trail. The couple also has added indoor and outdoor stages, and plan to host live music weekly.

The indoor stage also serves as a spotlight for local artists. While it is currently adorned with woodwork done by local artist and Hartsburg Mayor Bill Molendorp, Jay Leffert said they plan to feature a new artist every quarter, with all the pieces shown being up for sale.

"We've changed it up quite a bit," Jay Leffert said of the restaurant, noting they've added a deli counter and new coolers as well.

The Burg plans to serve as a deli where customers can get sandwiches and salads, as well as a spot for burgers, appetizers and cold drinks, including beer and mixed drinks. Jay Leffert said they have a large selection of microbrews and domestic beers available. Eventually, the Lefferts said they will expand their hours to offer breakfast on weekends, but that part is not quite ready yet.

To start, the Burg will be open 3-9 p.m. Wednesday and Thursday, 11 a.m.-9 p.m. Friday and Saturday, and 11 a.m.-7 p.m. Sunday.

Jay Leffert was quick to point to The Burg's new manager, Cindy Nilges, as a core part of the team who will be responsible for make the spot successful. Nilges said she's excited to create something from scratch, noting she comes from more of a restaurant background and is learning more about the deli side as they go. When it comes to the food, Nilges' description was pretty straightforward: "It's going to be simple and good."

The Leffert's agreed.

"I think the food is going to be fantastic," Jay Leffert said. "We're ready."

The Burg officially opens Wednesday at 35 E. Main St. in Hartsburg. For more information, check out their Facebook page at Facebook.com/TheBurg.PubGrubandDeli.
