Jefferson City’s August 2020 restaurant inspections

Jefferson City’s food code requires food-service establishments to be inspected at least once every six months.

Priority violations are items, if in non-compliance, that are more likely to contribute to food contamination, illness or an environmental health hazard. Some examples of priority items include improper holding temperatures of foods, inadequate cooking of food items, poor personal hygiene and contaminated equipment.

Examples of core items include cleaning and maintenance of floors, walls and ceilings; open waste receptacles; unshielded light bulbs in food-preparation areas; and missing thermometers in refrigeration units for monitoring temperature.

The food code typically requires establishments to correct priority violations at the time of inspection when possible, or within a longer time frame not to exceed 10 days agreed upon with the regulatory authority. Establishments are required to correct core violations by a date agreed to with the regulatory authority not to exceed 90 days from the time of inspection.

August 2020 inspections noted:

Arris Bistro & The Liquid Lounge, 409 W. Miller St., two core violations: particle board shelf above food-prep cooler in disrepair; wiping cloths not stored in sanitizer between uses.

Arris Pizza Palace, 117 W. High St., one core violation: light covers absent over lights in kitchen prep area.

Break Time No. 3049, 1200 Missouri Blvd., one core violation: no covered trash can in public restroom.

Dollar General Store No. 1219, 1414 Missouri Blvd., one core violation: debris in bottom of reach-in cooler.

Dragon Kitchen, 2219 Missouri Blvd. Suite D, four core violations: dust on ceiling tracks above buffet; mold on caulk around bathroom hand sinks; chest freezer in store room in disrepair; meat cleaver blade in food-prep room chipped.

El Espolon Mexican Restaurant, 915 Eastland Drive, one priority violation: foods in walk-in cooler above 41 degrees F, near 50 degrees F, and foods in vegetable prep table above 41 degrees F, near 50 degrees F — and two core violations: several broken toilet tank lids in women’s restroom; unshielded light in kitchen over meat prep table.

• Follow-up inspection — two core violations: kitchen light unshielded; missing women’s restroom toilet tank tops are being made to replace.

El Espolon Mexican Restaurant, 450 Rock Hill Road, three core violations: some broken wall and missing floor tile needs replacement, back door is not rodent-proof and requires replacement; vegetable prep table door sill and gaskets torn or loose, allowing doors to gap and lose cold air, draft beer cooler iced over (running 50 degrees F instead of 41 degrees F or lower); no trash container lids on dumpster, litter and trash present around dumpster, and broken steam table needs to be removed from dumpster area.

Fuji Japanese Steak House, 3600 Country Club Drive Suite 512, three core violations: sushi display cooler windows broken near missing handles; paper towels at sushi bar hand sink not held in dispenser; dish machine continues to run after completing cycle.

J.C. Eagle Stop, 3505 Missouri Blvd., one core violation: paper towel dispenser broken at front hand sink, using paper towels without dispenser until repaired.

Lee’s Famous Recipe, 1550 Missouri Blvd., four core violations: food product on floor in walk-in freezer; personal items stored on food product shelves by walk-in freezer; food debris on floor under shelves in walk-in cooler; food debris around outside dumpster.

Long John Silvers, 2220 Missouri Blvd., three core violations: leak in drain line of dish machine; interior of front and back counters in disrepair with buckling, cracked formica and holes present, cracked ceiling tile; reach-in freezer door gaskets, microwave roof, hots cabinet and ice maker shatter plate soiled.

McDonald’s, 3124 S. Ten Mile Drive, one priority violation: Canadian bacon in assembly cooler above 41 degrees F, at 50 degrees F (corrected on site) — and four core violations: assembly cooler above 41 degrees F, at 50 degrees F; coved base tile broken at corner to back storage rooms; door gaskets torn on frappe machine; leak from drink station on floor.

McDonald’s, 1425 Missouri Blvd., two core violations: missing light shields above work line; frappe machine bin above 41 degrees F (corrected on site) and assembly table cooler has ice blockage over fans.

McDonald’s, 815 Eastland Drive, three core violations: grease deposits at fry station and in back at grease dump tank; front hand-wash sink does not provide 15-second minimum water flow after activation, back hand-wash sink turned off until repaired, does not turn off after activation; detail clean surfaces and corners of McCafe and shake machines.

Mel’s Country Cafe Inc., 2421 Industrial Drive, five core violations: pull rack/speed rack in walk-in cooler soiled; need to reorganize and store boxed food off floor in walk-in freezer; restroom doors not fully self-closing, employee restroom paper towel dispenser out of battery; kitchen Coke reach-in cooler evaporator becoming clogged with debris; kitchen floor under chicken roaster and table under grill has debris accumulation present.

Mr. Convenience, 230 E. McCarty St., no violations.

New China Restaurant, 905 Eastland Drive Suite D, two core violations: food residue on walls by fryers, on wall under work table; wall of cooler/floor has food debris accumulation.

Paddy Malones Irish Pub, 700 W. Main St., one priority violation: food-prep table not holding product at 41 degrees F or below (corrected on site).

Papa Johns Pizza, 2103 Missouri Blvd., no violations.

Red Lobster No. 733, 3519 Country Club Drive, two priority violations: dish machine not washing/rinsing at proper temperature to sanitize dishes; item not held at proper temperature (corrected on site) — and four core violations: torn gaskets on reach-in cooler; two lights not working properly in walk-in cooler; debris on wall in dish room (corrected on site); floor drain had accumulation of debris present (corrected on site).

Great American Cookie & Marble Slab Creamery, three priority violations: personal medicine, glass cleaner and insecticide stored with straws, icings, etc., under front counter; employee states triple sink used to wash and rinse food-contact surfaces, no sanitizer used; fudge brownie cookie dough and chocolate cake found moldy in walk-in cooler — and five core violations: cooling rack cover torn, unsealed wood boards used for rack leveling in walk-in cooler, smooth side of dough roll-out counter missing; dipper well and marble slab turned off, no running water on utensils between uses; restroom door not self-closing and doesn’t properly latch; cooling rack cover, leveling boards in walk-in cooler and Icee machine knobs moldy; boxes of single-serve items on back storage room floor.
