BizBeat: Pancho's Mexican Food coming to Missouri Boulevard

Passersby might notice the former Long John Silvers on Jefferson City's Missouri Boulevard looks a little different as it transitions to Pancho's Mexican Food.

The formerly blue and yellow restaurant is now a stark red and white as its new tenants prepare to bring the new franchise to town.

"Feel the joy of new flavors of Mexican cuisine with your new local family restaurant and the most authentic, delicious Mexican food all around," the business advertised online.

While there's no released opening date so far, the company stated in an announcement it will offer traditional authentic Mexican fast food, including tacos, quesadillas and burritos. The menu will also offer more unique fare, such as chili Rellenos, Chile Verde and carne asada, a type of grilled and sliced beef.

The business, which has numerous other locations across the country, including in Springfield and Blue Springs, says its menu is prepared daily with fresh ingredients from local Mexican markets. It's also slated to offer dine-in, drive-through and delivery and is supposed to be open 24 hours daily.

"Our commitment to freshness and flavor ensures that each and every order is as delicious as the last," the announcement read. "We strive to provide a fast and friendly dining experience, so come in and experience the flavor of Mexico at Pancho's Mexican Food."

Pancho's Mexican Food will be located at 2220 Missouri Blvd.
