Jefferson City restaurant inspections from January 2018

Jefferson City’s food code requires food-service establishments be inspected at least once every six months.

Priority violations are items that, if in non-compliance, are more likely to contribute to food contamination, illness or an environmental health hazard. Some examples of priority items include improper holding temperatures of foods, inadequate cooking of food items, poor personal hygiene and contaminated equipment.

Examples of core items include cleaning and maintenance of floors, walls and ceilings; open waste receptacles; unshielded light bulbs in food preparation areas; and missing thermometers in refrigeration units for monitoring temperature.

The food code typically requires establishments to correct priority violations at the time of inspection when possible, or within a longer time frame no to exceed 10 days agreed upon with the regulatory authority. Establishments are required to correct core violations by a date agreed to with the regulatory authority not to exceed 90 days from the time of inspection.

Inspections for January 2018 noted:

Wendy’s Old Fashioned Hamburgers, 3536 Country Club Drive, three core violations: in-use utensils stored incorrectly; soda machine in lobby had debris present; and no covered trash cans present in women’s restroom — and one priority violation: ketchup dispenser in lobby had debris on the nozzles.

Arby’s, 2815 S. Ten Mile Drive, two core violations: seal is torn on Beverage Air cooler; and sandwich knife had debris present — and two priority violations: portions being held outside temperature control; and lettuce not dated in make cooler.

Arris Pizza Palace, 117 E. High St., two core violations: disposable paper towels and soap not present at bar; and light covers missing over lights in prep area.

Bones Restaurant and Lounge, 210 E. Commercial Way, four core violations: sleeves/boxed Styrofoam cups and plates found on floor; consumer advisory not on current menu; pizza cutters, walk-in cooler shelving and salad low boy cooler have food debris or dust present; and roof leak present in back pantry area (not above food storage presently).

Buffalo Wild Wings Bar & Grill, 707 Stoneridge Pky., Suite B, one priority violation: dishwasher in bar area not sanitizing properly — and one core violation: soda machine had debris on diffusers.

Central Dairy Fountain, 610 Madison St., two priority violations: foods in self-service cooler above 41 degrees F (at 51 degrees F); and hot dogs below required 135 F on basket grill.

Chez Monet Patisserie, 515 Mulberry St., no violations.

Chili’s Bar & Grill, 3515 Missouri Blvd., one core violation: soda machine in waitress stations has debris present.

Domino’s Pizza, 1717 Christy Drive, one priority violation: pizza-cutting knives had food debris present — and one core violation: oven trays have accumulation of food debris present.

El Jimador, 2930 W. Edgewood Drive, three priority violations: walk-in cooler racks have food debris accumulation and two-door reach-in cooler has mold on wire racks; cut tomatoes and crab meat not at correct holding temperature of 41 degrees F; and knives stored with food debris accumulation on knife holder — and 11 core violations: prep sink faucet has no hot water; kitchen hand sink has no cold water; light cover absent over lights in prep area and walk-in cooler; ceiling tiles and light covers not clean throughout; lights not working in several areas of kitchen; cigarette butt accumulation on ground outside; floor under dishwasher not clean; food not covered in kitchen, dry storage and service areas; bottom of reach freezer has food debris; interior server cabinet has food residue accumulation; can opener blade has food residue accumulation; and outside dumpster enclosure area has food residue accumulation/trash accumulation outside dry storage area.

• Follow-up inspection — two core violations: light cover absent over light in walk-in cooler; and outside dumpster enclosure area has trash accumulation.

Revel Catering Events Center, 102 E. High St., one priority violation: chef knives on magnet bar soiled — and two core violations: flooring in poor repair underneath dish machine/ possible flood/leak damage; and paper towels for hand drying not in dispenser at kitchen hand sink.

J. Pfenny’s Sports Bar & Grill, 217 E. High St., two priority violations: final rinse of dish machine does not reach sanitizing temperature; and foods stored in left prep table cooler above 41 degrees F (at 50 degrees F) — and two core violations: right prep table cooler foods at 45 degrees F (should be 41 degrees F or less); and no cold water available at dish station hand sink for tempering hot.

Jamey’s Club, 900 W. McCarty St., one core violation: microwave interior soiled with food debris.

Lutz’s Famous BBQ, 3505 Missouri Blvd., one core violation: gaskets loose on reach-in cooler.

Madison’s Cafe, 216 Madison St., three core violations: replacement textured ceiling tile present in one area of kitchen; torn door gaskets on salad cooler; coved base panels missing in dish room and part of kitchen; and soiled ceiling tiles present near hood over salad cooler.

McDonald’s, 1425 Missouri Blvd., one priority violation: egg whites not being held at correct temperature — and four core violations: bottom of fry freezer had debris present; soda drain in drive-thru has debris present; soda machine in the lobby has debris present; and lobby ketchup dispenser had debris present.

McDonald’s 1918 Jefferson St., five core violations: vents over flat-top fryer had debris present; seal on Beverage Air cooler torn; front creamer machine had debris splatter present; ketchup dispenser in kitchen had debris; and juice machine in drive-thru had debris.

Mel’s Country Cafe, 2421 Industrial Drive, two priority violations: several cigarette butts found on walk-in cooler floor, other butts within 10 feet of outer openings; and no hot water at kitchen nor servers’ hand-wash sinks — and six core violations: lighting downstairs in oven area inadequate; no paper towels present in employee restroom nor hot water; no consumer advisory on menu; need to clean and sanitize items including oven and stovetop,slicer, walk-in cooler shelves, roll out ingredient bins, prep cook area and mixer, top of triple sink; open tubs of food stored on walk-in cooler shelving without lids; and boxed food on walk-in cooler and freezer flooring.

• Follow-up inspection, three core violations: unshielded lights in prep area and downstairs prep areas; boxed foods on walk-in freezer floor; and continuing to work with menu, consumer advisory should be printed on menus in February.

Perkins Restaraunt & Bakery, 1722 Jefferson St., two priority violations: shell eggs held at 50 degrees F on Line 1 egg well (should keep below 45 degrees F at 41 degrees F); and pot pies on cooling rack at 120 degrees F, not cooled to 70 degrees within two hours — and six core violations: some light fixtures unshielded in kitchen over working lines; coved base tile and wall panels loose in dish station; butter scoops left in stagnant water instead of running water dipper well; open ceiling tiles above cooking lines as well as pot/pan sink; Westenn refrigerated pie case broken; and running water dipper wells non-functional.

Prison Brews, 305 Ash St., one priority violation: commercial dishwasher not sanitizing — and one core violation: light cover missing over lights in kitchen prep area.

Stean ‘N Shake, 2519 Missouri Blvd., four core violations: servers’ bulk milk dispenser is out of service, awaiting repair/replacement; coved base tile missing in back of house as well as restrooms; ceiling air vents rusty and stained; and dispensing handle of drive-by milk dispenser missing (using fork to shut off milk flow).

Stadium Blvd., eight core violations: several dented cans on display shelf; debris on shelf with bagged cereal; debris under shelves in several areas; debris on shelf with flour and sugar; debris under pizza rolls; debris in open coffin case with creamer; debris in reach-in cooler with eggs; and debris in dairy reach-in cooler.

The Salvation Army Center, 900 Jefferson St., four core violations: interior island cabinets have food residue; single-service cooler being used at front service area; disposable paper towels not available at hand sink to dry hands; and dust accumulation on ceiling tiles around vents.

ABB Cafeteria, 500 W. Missouri 94, one core violation: boxed food on floor of walk-in freezer subject to moisture or contamination.

Walmart Supercenter No. 29 — Meat/Seafood, 724 W. Stadium Blvd. — three core violations: fan covers in walk-in cooler had debris present; debris present under grates in lunch meat area; and debris under hot dogs.

Domenico’s Italian Restaurant, four core violations: need to remove discarded coolers from trash area in timely manner; two hood filters either missing or in poor repair; kitchen ceiling tiles food-stained in several areas; and consumer advisory added to new menus but menus not distributed yet.

IHOP No. 3568, 2011 Missouri Blvd., one priority violation: knives on magnet strip had debris present — and six core violations: vents over fryers had debris present; floors in walk-in freezer had debris; no hand-wash sign at the grill hand sink; dishwasher trap had large amount of debris present; and bottom of fry freezer had debris present.

Sodexo @ SSM Health — St. Mary’s Hospital: four priority violations: cooler drawer under grill not at proper temperature; lettuce at grill dressing station not proper temperature; chicken fingers at grill side not at proper temperature; and chicken in hot meal area not at proper temperature — and four core violations: several dirty knives in knife holding box; bottom of hot boxes have debris present; floor drain near prep sink area had food debris present; and single-serve cups laying on floor in store room.

JQ’s on High, 911 E. High St., two priority violations: items in reach-in cooler did not have proper date marking; and pulled pork sitting on countertop was 87 degrees F — and two core violations: can opener with debris present; and vents had debris present.
