Jefferson City food service inspections for August 2017

Jefferson City's Food Code requires food-service establishments be inspected at least once every six months.

Priority violations are items that, if in non-compliance, are more likely to contribute to food contamination, illness or an environmental health hazard. Some examples of priority items include improper holding temperatures of foods, inadequate cooking of food items, poor personal hygiene and contaminated equipment.

Examples of core items include cleaning and maintenance of floors, walls and ceilings; open waste receptacles; unshielded light bulbs in food preparation areas; and missing thermometers in refrigeration units for monitoring temperature.

The food code typically requires establishments to correct priority violations at the time of inspection when possible, or within a longer time frame not to exceed 10 days agreed upon with the regulatory authority. Establishments are required to correct core violations by a date agreed to with the regulatory authority not to exceed 90 days from the time of inspection.

The August 2017 inspections noted:

Sonic Drive In, 1711 E. Elm St., one priority violation: sprayer hose attached to faucets, lying in sink without vacuum breaker installed - and one core violation: line freezer running around 24-26 degrees F instead of zero degrees F. Follow-up inspection - one core violation: line freezer contents above 20 degrees F.

Break Time No. 3049, 1200 Missouri Blvd., three core violations: utensils at roller grill had debris present; debris in ice cream freezer (corrected on site); debris in the bottom of the bun drawer.

Buffalo Wild Wings Grill & Bar, 707 Stoneridge Parkway, Suite B, two priority violations: bar dishwasher not sanitizing; no customer advisory on the menu - and one core violation: microwave had food debris present. Follow-up inspection: no violations.

Chicks Tap Room, 2713 Industrial Drive, Suite E, no violations.

Das Stein Haus, 1436 Southridge Drive, one core violation: menu consumer advisory is being worked on.

Dragon Kitchen, 2219 Missouri Blvd., Suite D, five core violations: shelves in dry goods storeroom need cleaned; boards, fryer baskets stored by grease dumpster; ice scoop chipped in server ice bin; hose bib vacuum absent over cold water faucet lines; lemon bowl stored in drinking ice bin. Follow up inspection: no violations.

Jimmy Johns, 128 E. High St., one priority violation: roast beef, tomatoes and turkey out of temperature range (corrected on site) - and one core violation: seals on cooler doors for make table torn.

McDonald's, 1425 Missouri Blvd., one priority violation: sausage gravy not at correct temperature (corrected on site) - and one core violation: latte machine had debris on nozzles.

Mel's Country Cafe Inc., 2421 Industrial Drive, two priority violations: pulled pork in servers' back-up cooler found above 41 degrees F, stored in large, deep pans; breaded pork tenderloin and Philly meat present in kitchen Coke cooler above 41 degrees F in storage (corrected) - and four core violations: spilled litter behind trash dumpsters; boxed food found stored on walk-in freezer floor; dry goods stored on floor of basement prep room; need to amend menu to add consumer advisory.

Scholastic - Algoa Location, 6336 Algoa Road, no violations.

Subway Sandwich Shop, 1922 Missouri Blvd., Suite B, three priority violations: under-counter cooler not maintaining temperature; knife at make table had food debris present (corrected on site); lettuce and chicken breast in the walk-in cooler did not have date label (corrected on site) - and two core violations: hand sink had items stored inside (corrected on site); microwave had debris present.

Follow-up inspection - one core violation: microwave had splatter debris present (corrected on site).

Taco Bell No. 382, 2605 Missouri Blvd., one priority violation: cooked eggs in walk-in cooler did not have date label (corrected on site) - and five core violations: strong urine smell in men's restroom; trash under self-service station in dining room; soda machine in drive-thru had debris present; dining room soda machine had debris present in drain; ledge near the dine-in make line had accumulation of debris.

Walmart Supercenter No. 29 - Grocery/Dairy, 724 W. Stadium Blvd., one priority violation: several dented cans on the shelf (corrected on site) - and five core violations: debris in bagged cereal area; debris on bagged rice shelf; debris in area of sour cream in reach-in cooler; debris under frozen corn in reach-in freezer; debris under frozen chicken in reach-in freezer.

Best Western Capital Inn, 1937 Christy Drive, no violations.

Econo Lodge, 1926 Jefferson St., two priority violations: unknown, unlabeled liquid in reused milk container; bleach present for sanitizing is scented - and six core violations: no paper towels present at hand-wash sink; no hot water present at hand-wash sink; no thermometer in GE dorm cooler used for milk service; plastic spoons and forks being presented eating side up to consumer; no sanitizer test strips available; painter was using utensil triple sink for cleaning up paint brushes.

Root Cellar, 306 E. High St., four core violations: restroom doors not adjusted for self-closing; kitchen and downstairs prep hand sinks are soiled; some kitchen cooler foods unlabeled with discard date; several areas of peeling paint in facility including over boxing area downstairs.
