Jefferson City food service inspections for July 2017

Jefferson City's Food Code requires food-service establishments be inspected at least once every six months.

Priority violations are items that, if in non-compliance, are more likely to contribute to food contamination, illness or an environmental health hazard. Some examples of priority items include improper holding of temperatures of foods, inadequate cooking of food items, poor personal hygiene and contaminated equipment.

Examples of core items include cleaning and maintenance of floors, walls, and ceilings; open waste receptacles; unshielded light bulbs in food preparation areas; and missing thermometers in refrigeration units for monitoring temperature.

The Food Code typically requires establishments to correct priority violations at the time of inspection when possible, or within a longer time frame not to exceed 10 days agreed upon with the regulatory authority. Establishments are required to correct core violations by a date agreed to with the regulatory authority not to exceed 90 days from the time of inspection.

The July 2017 inspections noted:

Wendy's Old-Fashioned Hamburgers, 3536 Country Club Drive, two priority violations: items on push cart in walk-in cooler not dated (corrected on site); salads in service cooler not at the proper temperature (corrected on site) - and two core violations: no paper towels at back hand sink; tomato slicer had debris present.

Arby's, 2815 S. Ten Mile Drive, two priority violations: item in walk-in cooler not date labeled (corrected on site); make cooler items out of temperature range (corrected on site).

Bones Restaurant & Lounge, 210 E. Commercial Way, one priority violation: sanitizer test strip did not turn color as required (corrected on site) - and three core violations: recheck Tramontina dorm cooler and Frigidaire combo cooler for proper holding of 41 degrees F or lower (currently 43-45 degrees F); required customer advisory missing from current menu; walk-in cooler wire shelving soiled; shelving by fry dump station soiled.

Captain D's Seafood, 2118 Missouri Blvd., one priority violation: Delfield make table and cooler not maintaining temperature - and three core violations: seals on several cooling units torn; plumbing at hand sink is not secured properly; dishwasher not working properly.

Follow-up inspection - two core violations: plumbing at hand sink is not secured properly; seals torn on several cooling units.

Chili's Grill & Bar, 3515 Missori Blvd., one priority violation: items on nacho bar not maintaining temperature.

Follow-up inspection - no violations.

Chipotle Mexican Grill, 1400 Missouri Blvd., no violations.

Convenient Food Mart, 3714 W. Truman Blvd., three core violations: drain at soda fountain had debris present; cream machine had debris present; Master Bilt three-door cooler had debris in bottom.

Das Stein Haus, 1436 Southridge Drive, three core violations: some hand wash sinks lack soap or paper towels; wall in back prep room has hole; consumer advisory being developed for menu.

Domino's Pizza, 1717 Christy Drive, one priority violation: items stored on countertop were outside temperature range (corrected on site).

Capitol Plaza Hotel/Fountain Court Lounge, 415 W. McCarty St., four core violations: numerous small leaks present at service bar and surrounding plumbing fixtures; rusty shelving units present for utensil storage; menu lacks full customer advisory of disclosure and reminder; beer reach-in cooler was at 50 degrees F instead of 41 degrees F or lower.

Freddy's Frozen Custard, 2103 Missouri Blvd., Suite A, one priority violation: dirty knife in use at make table (corrected on site).

Gerbes No. 118 Superstore - Grocery, 2101 Schotthill Woods Drive, no violations.

Gumbo Bottoms, 221 Madison St., two core violations: soda head had debris present; draft beer drain had debris present (corrected on site).

Hardee's No. 1500561, 3601 Country Club Drive, one priority violation: hole in wall by mop sink - and nine core violations: dirty utensils in use; microwave with splatter and debris present; floors around breakfast grill have debris and grease present; fan cover in walk-in cooler had dust accumulation; ledge of meat freezer had debris present; torn seals on fry freezer and prep cooler; fry freezer had debris present; floors had debris and grease accumulation around fryers; lobby soda machine had debris present.

McDonald's, 1918 Jefferson St., two priority violations: fish fillets not at correct temperature (corrected on site); items on cooler rail were out of temperature range (corrected on site) - and six core violations: microwave had debris present; four-door freezer had debris in bottom; orange juice machine had debris; latte machine had debris; soda machine had black debris present; nozzles at lobby soda machine had debris present (corrected on site).

New China Restaurant, 905 Eastland Drive, Suite D, two core violations: grease accumulation present on interior of exhaust hood; grease present on walls under work station.

Paddy Malone's Irish Pub, 700 W. Main St., two core violations: water pooling under floor tile in front of triple sink; ceiling tile loose in kitchen.

Pizza Hut, 1431 Christy Drive, one core violation: soda machine nozzles had built-up debris present (corrected on site).

Sonic Drive-In, 201 Commerce Drive, one priority violation: items in walk-in cooler did not have date labels (corrected on site) - and two core violations: ice cream machine had debris present; debris under the roller grill (corrected on site).

Stir Fry 88, 3600 Country Club Drive, Suite 229, no violations.

Taco Bell No. 377, 1905 Southwest Blvd., two core violations: men's room urinal does not flush; soda cabinet doors and shelf in disrepair.

Target Store T752 (Grocery), 735 W. Stadium Blvd., no violations.

Sonic Drive-In, 314 Ellis Blvd., one priority violation: Beverage Air cooler not maintaining temperature - and two core violations: debris on floor near ice cream machine; vent hood had debris present.

Follow-up inspection - one core violation: vent hood had grease build up present (corrected on site).

Wal-Mart Supercenter No. 29 (Deli), 724 W. Stadium Blvd., one priority violation: no date marking on open bag of lettuce (corrected on site) - and two core violations; debris in tracks of deli case; debris in the bottom of sliced deli meat case.

Target Store T752 (Food Avenue, Pizza Hut Express and Starbucks), 735 W. Stadium Blvd., one priority violation: hot dogs and foods in under-counter cooler 1 above 41 degrees F (at 48-50 degrees F, corrected on site) - and three core violations: numerous thermometers present but mostly inaccurate; cooler 1 running above required 41 degrees F; overstock of Starbucks found on floor in back room.

Ellis-Porter/Riverside Pool, 320 Ellis-Porter Drive, one priority violation: employees stated they wash, scrub and rinse soiled utensils, no sanitizer used and no bleach present in concession site - and three core violations: hand sink in concession stand lacked soap and paper towels, sink appeared soiled; hose attached to mop sink faucet without vacuum breaker present (corrected on site); Coke two-door beverage cooler holding around 60 degrees F instead of 40 degrees F.

Follow-up inspection: no violations.

Unilever Corporation Cafeteria, 2900 W. Truman Blvd., two priority violations: supreme pizza in rotary warmer below required 135 degrees F (corrected on site); inconsistent dish machine temperatures noted, machine reached sanitizing level only once in at least a dozen runs, test strip did not turn color - and one core violation: detail cleaning of walk-in cooler, cooking range and line, and nearby shelving needed.

West Main Pizza, 1931 W. Main St., Suite B, three core violations: bar glass had debris (corrected on site); vent hoods had debris present; can opener had debris present (corrected on site).

The Blue Skillet, 226 E. Dunklin St., two priority violations: Turbo Air cooler not maintaining temperature at 41 degrees F or less; items in hot box not 140 degrees F or above (corrected on site) - and two core violations: vent hoods had accumulation of grease debris; outlet cover broken.

Sabaai-Sabaai Thai Cuisine, 219 Madison St., three priority violations: double-door cooler not maintaining temperature of 41 degrees F or less (corrected on site); raw chicken stored above ready-to-eat food items (corrected on site); sauces not at the correct temperature (corrected on site) - and one core violation: no thermometers present for food temperatures (corrected on site).

Panera Bread, 2214 Missouri Blvd., seven core violations: apple slicer had debris; utensils in the dish area had debris (corrected on site); sanitizer not present in the dishwasher (corrected on site); track in the bakery service cooler had debris (corrected on site); black debris on wall by triple sink; fan covers in walk-in cooler had dust accumulation; debris in bottom of cooler drawer cabinet.

Brew House Too, 319 W. Miller St., one core violation: no chlorine sanitizer strips available for use after wash/rinse/sanitize.

Studio 573 Fitness, 3600 Country Club Drive, three core violations: box of single-serve cups stored on floor of smoothie bar; ladies' restroom door does not self-close; employee stated dishwashing consisted of sanitizing, washing and rinsing (corrected on site).
