BizBeat: West Edgewood convenience store looks to November opening

Jefferson City will have to wait a little longer for a planned fuel station, convenience store and Pita Pit restaurant under construction on West Edgewood Drive.

While construction is well underway for the Phillips 66 station and Edge Express convenience store, delays in installing the underground fuel lines have pushed the anticipated opening date back from September to sometime in November.

"Once we close that up and then we pour the concrete and they finish the canopy and put the dispensers on, the outside's done, so it could go pretty quick," said owner Steve Scherr, who also owns and operates Mr. Convenience and The Car Guys on East McCarty Street.

Edge Express will be accompanied by a Pita Pit franchise, offering a menu of meat, veggie and breakfast pita sandwiches.

Scherr said he hopes to time the opening of the fuel station and Pita Pit to coincide.
