Jefferson City food service inspections for August 2016

Jefferson City's Food Code requires food-service establishments be inspected at least once every six months.

The inspections note critical and non-critical violations. Critical violations are the more serious, as they are more likely to compromise food safety and cause health problems. Critical violations often concern improper food temperatures, either on a stove/grill or in holding areas after cooking or before cooking, such as in a refrigerator. They also could involve plumbing repairs, personal hygiene, people who are sick handling food or contamination, such as pest infestations.

Non-critical violations are more minor offenses, which could deal with cleaning/ maintenance of floors, walls, ceilings, open waste receptacles, unshielded light bulbs in a food preparation area or a missing thermometer in a refrigerator.

The Food Code typically requires establishments to correct critical violations at the time of inspection when possible, or within a longer time frame not to exceed 10 days agreed upon with the regulatory authority. Establishments are required to correct non-critical violations by a date agreed to with the regulatory authority not to exceed 90 days from the time of inspection.

The August 2016 inspections noted:

Angelina's Cafe, 101 Boonville Road, no violations.

Arby's, 2815 S. Ten Mile Drive, three non-critical violations: several flies noted in kitchen area during inspection (fly traps present but not adequate for restaurant); food on floor in walk-in cooler; trash on floor in drink station area.

Arris Bistro & Liquid Lounge, 409 W. Miller St., one critical violation: prep cooler-center not holding required temperature of 41 degrees F or below - and two non-critical violations: prep cooler's door gaskets in disrepair; several lights not working in kitchen area.

Bones Restaurant & Lounge, 210 E. Commercial Way, no violations.

Break Time No. 3049, 1200 Missouri Blvd., one non-critical violation: cappuccino machine had splatter debris present.

China Wok, 520 Ellis Blvd., Suite L, two non-critical violations: back screen door has gaps present around edges (does not prevent entry of insects); front door open to establishment.

Dollar General Store No. 1219, 1414 Missouri Blvd., one non-critical violation: cooler with eggs and milk had debris in bottom.

Domino's Pizza, 3732 W. Truman Blvd., one non-critical violation: dispenser not working properly (new dispenser on order).

Baymont Inn & Suites (R Bar, hot breakfast), 319 W. Miller St., four non-critical violations: plastic ware dispensed with food contact surface presented to customer (should prevent handle first); small service table in bar next to sinks and ice bin deteriorating; one faucet housing on four-hole sink corroded; water turned off to sinks until operating time due to leaks.

JC Mart, 105 W. Dunklin St., seven non-critical violations: Seal on walk-in cooler door torn; bottom of Monster cooler has debris present; tracks of Blue Bunny freezer had debris present; bottom of Blue Bunny freezer had debris present; bottom of two-door cooler had debris present; black debris on shelves in two-door cooler; fan covers in walk-in cooler had dust and debris accumulation.

Jimmy Johns, 128 E. High St., one non-critical violation: seal on make cooler torn.

Longhorn Steakhouse of JC No. 5219, 3545 Missouri Blvd., five non-critical violations: seals on many of coolers torn or in disrepair; vents over flat top grill need to be cleaned; fan covers in walk-in cooler and freezer had accumulation of dust and debris; grease buildup on wall behind grills and flat top; bottom of meat cooler drawer had debris present.

Madison's Cafe, 216 Madison St., one critical violation: no sanitizer being dispensed from dish machine - and three non-critical violations: coved base missing in parts of dish room and some broken tiles; some missing ceiling tiles in downstairs men's restroom; both ice maker shatter plates soiled.

Mel's Country Cafe Inc., 2421 Industrial Drive, one non-critical violation: sliced tomatoes, sliced turkey and ham above 41 degrees F but under 50 degrees F in dress table.

Papa John's Pizza, 2103 Missouri Blvd., two non-critical violations: floors in walk-in cooler have debris present; no lidded trash can in restroom.

Perkins Restaurant & Bakery, 1722 Jefferson St., seven non-critical violations: ice cream dipper well bottom covered with ice cream and pie debris, and ice maker interior and exterior soiled; ice cream dipper well not being used due to plumbing issue; only one light in walk-in freezer still has shield present, other fixtures missing shield with broken bulbs; broken coved base tile in corner of employee restroom; loose floor tile on cook's line, trapping water underneath; walls at dish machine scrape station and behind unit covered with food debris accumulation; ceiling tile in back part of kitchen dark with accumulation and dust present on tile in front of walk-in cooler.

Quality Catering, 2834 Rock Ridge Road, no violations.

Red Lobster No. 733, 3519 Country Club Drive, one non-critical violation: soda machine had black debris present.

Ruby Tuesday, 2300 Missouri Blvd., four non-critical violations: detail clean from food debris floor in walk-in freezer, corner walk-in cooler, floor under cook linen equipment, walls by prep cooler/hand sink/under dish room drain board; dust present on cook line ordering monitors; wiping cloths scattered in outside enclosure area; food debris/trash present in corner behind grease dumpster/under dumpster.

Sawaddee, 103 E. High St., one critical violation: items on make table not being held at 41 degrees F or less.

Follow-up inspection: no violations.

Scholastic - Algoa Location, 6336 Algoa Road, one non-critical violation: sanitizer buckets not testing correctly with correct level of sanitizer.

Spectators Sports Bar and Billiards, four non-critical violations: ice maker, slicer and downstairs bar ice bin soiled (cleaned while on site); foods in dress table above 41 degrees F (new replacement table ordered); epoxy flooring in kitchen coming apart; no covered trash can present in downstairs ladies' restroom.

Steak 'N Shake, 2519 Missouri Blvd., one critical violation: meat pucks in puck cooler above 45 degrees F in use (reading between 48-52 degrees F - and seven non-critical violations: drive-by bulk milk cooler soiled, ice maker shatter plate soiled and wire shelving in walk-in cooler soiled (moldy); coved base tile missing throughout facility in various locations; puck cooler does not run at 41 degrees F or lower; condiments in top of line dress table above 45 degrees F; condiments in top of drive-by dress table above 45 degrees F; dish machine soap dispenser partially obstructed, soap and water spill out of dispenser during wash cycle; walk-in freezer fan units almost blocked by heavy frost/ice accumulations.

Barnes and Noble Cafe, 3535 Missouri Blvd., Suite 101, one critical violation: dishwasher not reaching correct temperature - and one non-critical violation: three-door freezer has debris in bottom.

Subway Capital Mall No. 15307, 3600 Country Club Drive, Suite 216, two non-critical violations: soda machine had splatter debris present; seal on countertop cooler torn.

Subway Sandwich Shop, 1922 Missouri Blvd., Suite B, one critical violation: cutting boards had deep grooves and cuts (owner ordered new board while on site).

Schulte's Fresh Foods - Deli, 1904 Southwest Blvd., five non-critical violations: floor behind fryers has accumulated soil/debris present; meat and cheese case between 41-45 degrees F (should be at 41 degrees F or lower); salad bar items above 41 degrees F but below 48 degrees F (should be 41 degrees F or lower); hood filters and sandwich table door gaskets soiled; deli floor pitted with numerous holes in epoxy finish even after previous repairs made.

Schnucks - Seafood, 1801 Missouri Blvd., one non-critical violation: equipment/shelving stored on floor under dry goods storage rack.

Mosers Discount Foods - Meat, 2411 Missouri Blvd., two non-critical violations: debris on bottom of open display cases; debris in bottom of coffin cases.

Yanis Coffee Zone, 130 E. High St., one critical violation: insufficient sanitizer being dispensed into dish machine - and one non-critical violation: wall by prep/dress table has condition of chipped paint and missing drywall spots.

Econo Lodge, 1926 Jefferson St., four critical violations: employee did not follow wash/rinse/sanitizer procedures, was observed not using soap or rinsing and sanitizer was too strong; sanitizer stored in pesticide container (bleach solution being used from an insect and pest spray container); sanitizer tested over 200 ppm chlorine; supply hose disconnected from fixture outlet, water sprays into cabinet from back small sink if turned on - and seven non-critical violations: top freezer compartment door of almond-colored GE combo does not close properly due to ice and frost accumulation; no paper towels present at hand sink; plastic ware presented food-contact side to customer instead of handle first; hot water turned off from hand sink out front; first sink of triple sink backed up; no soap present at hand sink; no thermometer present in black GE dorm cooler (with milk).

Senior Center at the Mall, 3600 Country Club Drive, one non-critical violation: ice catch tray had debris present.

Root Cellar Grocer, 306 E. High St., two non-critical violations: no distributor listed on label or repacked nuts and seeds; self-closing doors for public and employee restrooms do not function (doors left open).

Knights of Columbus, 1822 Tanner Bridge Road, one non-critical violation: interior of ice machine soiled, cooking line including filters and equipment sides have grease/oil accumulations.

Days Inn, 2100 Jefferson St., one critical violation: self-serve milk in pitchers above 41 degrees F (over 50 degrees F) - and one non-critical violation: microwave roof and interior in poor repair (rust and peeling enamel present).

The Academy of Innovative Learners, 2003 Southridge Drive, one critical violation: milk and formula measured above 41 degrees F in I/T Center Frigidaire combo cooler - and one non-critical violation: Frigidaire combo cooler in I/T Center measured above 41 degrees F, near 50 degrees F.

Follow-up inspection: no violations.

Walmart Supercenter No. 29 - Meats/Seafood, 724 W. Stadium Blvd., one non-critical violation: debris present under food product in coffin cases.

Great American Cookies, 3600 Country Club Drive, Suite 506, five non-critical violations: no hand-washing signage visible at either hand-wash sink; single-service items (cups, lids, etc.) stored in front hand sink cabinet under drain line; no receptacle for paper towels provided at front hand-wash sink; cold water turned off to triple sink due to drip in line under sinks; walk-in cooler fan cover and condenser back soiled with dust, and green two-door storage cabinet soiled with food spills (corrected on site by manager).

Sam's Club No. 6505 - Grocery, 849 Stoneridge Parkway, no violations.

Burger King, 1923 Christy Drive, no violations.

Mighty MO Cashsaver - Grocery, 2411 Missouri Blvd., one non-critical violation: shelf with bagged cereal has debris present.
