A new, quick dining option rolls into Jefferson City next week.
La Cabana Taco Truck will open its window for business Nov. 16 in the parking lot of TitleMax at 1001 Missouri Blvd.
Married owners Lena and Zach Salazar are new to the food industry, and excited about the fresh adventure of running the business together.
"My husband is from the state of California, and we do California-style tacos," said Lena Salazar, a Jefferson City native.
La Cabana - Spanish for "The Cabin," "our getaway," as Salazar called it - will also moonlight in California, Missouri, where the couple lives.
The menu includes California-style tacos with carne asada or chorizo (Mexican sausage), as well as carne asada burritos with rice, cheese, onions and cilantro.
La Cabana will maintain its semi-permanent location in the TitleMax lot, serving food from 11 a.m.-6 p.m. Mondays through Fridays.
"It's right there on Missouri Boulevard. There's ample parking; it won't be congested for anyone going in or out," Salazar said. "I think it's going to be a really good location for both us and customers to get in and out safely."
Every other Saturday, the taco truck will be open for business in California in front of Tan N Go Video at 207 W. Buchanan St.
Inclement weather could close the food truck's operations on a day-to-day basis.
Jefferson City changed its ordinances in 2012 to allow for mobile food units. The ordinance requires a food truck operate on a private business lot with permission from the property owner and the truck remain stationary no more than 14 days at a time.
La Cabana already has served tacos and burritos in California and at special events including the Moniteau County Fair and Providence Bank's customer appreciation day a couple of weeks ago. The Salazars have been waiting for the truck's custom screen to arrive before opening for business in Jefferson City.
The taco truck will be available to come to future special events by request.
"We'll go wherever they want us," Salazar said.
