Jefferson City's Food Code requires food-service establishments be inspected at least once every six months.
The inspections note critical and non-critical violations.
Critical violations are the more serious, as they are more likely to compromise food safety and cause health problems. Critical violations often concern improper food temperatures, either on a stove/grill or in holding areas after cooking or before cooking, such as in a refrigerator. They also could involve plumbing repairs, personal hygiene, people who are sick handling food or contamination, such as pest infestations.
Non-critical violations are more minor offenses, which could deal with cleaning/maintenance of floors, walls, ceilings, open waste receptacles, unshielded light bulbs in a food preparation area or a missing thermometer in a refrigerator.
The Food Code typically requires establishments to correct critical violations at the time of inspection when possible, or within a longer time frame not to exceed 10 days agreed upon with the regulatory authority. Establishments are required to correct non-critical violations by a date agreed to with the regulatory authority not to exceed 90 days from the time of inspection.
The June 2015 inspections noted:
Sonic Drive-In, 1711 E. Elm St., one critical violation: cook bare-handing ready-to-eat food (i.e. onion, lettuce, tomato, buns, burgers, chicken strips, etc.) during service - and three non-critical violations: accumulated soil or mold present in cooler racks, underneath fryers, on make table door gaskets, on ice cream blender corners, etc.; floor under fryers has accumulated debris buildup present; walls under and next to triple sink have buildup of soil and mold and HVAC vent by walk-in freezer has mold present.
Wendy's Old-Fashioned Hamburgers, 3536 Country Club Drive, one non-critical violation: gasket on front upright cooler torn and in disrepair (manager stated there is a gasket on order to replace it).
Arris Pizza Palace, 117 E. High St., five non-critical violations: green water hose used as faucet in back prep sink - extension too long; light cover absent over light in dish room; shelving units in kitchen with edging coming loose and bare wood present; dust present on ceiling tiles in kitchen and water-damaged ceiling tile present; grease deposit/food debris accumulation under kitchen fryers.
Burger King No. 2271, 2207 Missouri Blvd., two non-critical violations: soda machine in lobby has splatter and debris present; ice scoop in drive-thru ice bin has chipping and peeling.
Capitol City Cork & Provisions, 124 E. High St., no violation.
Captain D's Seafood, 2118 Missouri Blvd., five critical violations: Delfield under-counter cooler not maintaining temperature; Delfield make table and cooler not maintaining temperature; microwave on top shelf has chipping and peeling paint on inside of door; goose neck on triple sink hanging below flood rim (no air gap present); faucet in mop sink has hose hanging down in sink with no back flow preventer present - and four non-critical violations: men's restroom door does not close properly; door seal on lower Delfield refrigerator door cracked; back edge of Delvield make table has food debris present; soda machine has black debris present.

Edgewood Drive, seven non-critical violations: interior trash cabinet has trash and food debris accumulation; walls not clean from beverage spillage on walls in back room; disposable paper towels not present at front service hand-washing sink; thermometer not working in front display cooler and ice bucket broken at bottom; light bulbs not working in back storeroom area; floors need cleaning from trash and food debris under front service counters, under refrigeration equipment, under three-compartment sink and under customer self-serve counter; hand-washing soap not available at front service hand sink.
Capitol Plaza Hotel/Fountain Court Lounge, 415 W. McCarty St., one non-critical violation: walls and coved base tile in dish station have soil deposits/mold present due to splash and leaks.

Hardee's No. 1500561, 3601 Country Club Drive, two critical violations: vent hoods had accumulation of grease and debris; no date marks present on shredded cheese or liquid eggs in walk-in cooler - and six non-critical violations: no trash can near back hand sink; food debris present on floor in walk-in freezer; black debris present on walls in mop sink area; Traulsen cooler has food debris inside and on door of cooler; soda fountain in lobby has debris and splatter present; two holes in wall in mop sink area.

Hibachi Grill & Supreme Buffet, 730 W. Stadium Blvd., seven critical violations: cut melons on cold bar above 41 degrees during display; cold salads on cold bar above 41 degrees during display (salads were iced to lower temperature on site); some sushi items above 41 degrees during display; cleavers found hanging on magnetic knife bar with food scraps present; cutting boards being cleaned once or twice a day instead of at least every four hours after food contact; employee open drink cups in several working areas; single-use cups being reused as found in ingredient bins and food bags - and seven non-critical violations: several walls in various locations soiled with food debris and splatters, especially meat room; no trash can readily available at main kitchen hand sink; thermometers missing from some cold holding coolers; one hand-wash sink without soap and several hand sinks had paper towels but not in dispenser; lighting burned out in several fixtures within kitchen and meat room; excess grease and debris from around grease dumpster ready to overflow into storm drain; no sanitizer buckets in kitchen for wiping cloths.
