BizBeat: New eatery to serve soups, salads at Capital Mall

Business owner John Fernandes is optimistic about Capital Mall's future - so optimistic he's opening a third business in Jefferson City's Country Club Drive retail hub.

Already operating High Voltage Arcade and Pretzel Maker, Fernandes plans to open Capital Cafe in the mall's food court sometime in March.

"No one would be trying to grow in there if they weren't seeing it," Fernandes said, noting the gradual improvement process at Capital Mall that has been in progress since Farmer Holding Company bought it in 2012. "Who sees it better than business owners in the mall or business managers? We're going to know if it's doing well or not."

The restaurant will specialize in soups, salads and pastas. Fernandes plans to serve a rotation of four different soups a day, a different type of pasta each day, and a customizable salad bar where customers can have salads made to their preferences. Capital Cafe will also offer a few dessert options, like cheesecake and carrot cake.
