BizBeat: Becky's Cupcakes and More opens Monday

A love of baking spurred by the death of her grandmother has brought Becky Stephenson to the start of a new business venture. The 19-year-old Linn native will open Becky's Cupcakes and More inside the Capital Mall on Monday morning.

"I'm dedicating this bakery to her," Stephenson said.

Bright and early, Stephenson hopes to appeal to the mall walkers with her muffins, scones, donuts, cappuccinos, and freshly roasted and ground coffee. After 10 a.m., she'll bring out the cupcakes, cake pops, pies, cheesecakes and giant cookies.

"Everything is from scratch," Stephenson said, emphasizing she doesn't believe in boxed baked goods.

The entrepreneur has been baking for friends and family for the past three to four years, honing her skills and perfecting her recipes. She uses many of her grandmother's recipes and had her passion for baking ignited by watching the TLC hit show Cake Boss. With four staple cupcake flavors - vanilla, chocolate, red velvet and carrot cake - Becky's will also offer seasonal flavors such as her vanilla cupcake with jam and peanut butter frosting, also known as the PB&J for back-to-school.

Becky's Cupcakes and More will offer daily specials on treats and drinks throughout the week.

Stephenson decided to open the cupcake shop after her family rallied around her, offering to help. The entrepreneur is in her third year at Columbia College, majoring in graphic arts. She graduated a year early after being

homeschooled through most of high school. Her parents own and operate JC Fine Arts Academy, also located in the Capital Mall.
